1 teaspoon vanilla extract
A small pinch of salt
For the chocolate topping:
200 g dark chocolate, chopped
1 teaspoon neutral vegetable oil, optional
Sesame seeds, optional, for decoration
Preparation and Cooking Time
Allow around 25 minutes for preparation, 30–40 minutes for baking and cooking, plus additional time for cooling and setting. The recipe makes approximately 12–16, depending on how large you cut them. A square baking tin lined with parchment paper makes the finished dessert easier to lift out and slice.
How to Make Tahini Millionaire
1. Prepare the baking tin. Preheat the oven to 180°C (160°C fan). Line a square baking tin with parchment paper, leaving a little extra over the edges to make lifting the finished dessert easier later.
2. Make the shortbread. Place the softened butter and sugar in a mixing bowl and beat until creamy. Stir in the vanilla extract and salt, then add the flour. Mix until a soft, crumbly dough forms. Press the mixture evenly into the prepared tin, using the back of a spoon to create a level surface.
3. Bake the base. Bake for approximately 18–22 minutes, or until the shortbread looks lightly golden around the edges. Remove it from the oven and leave it to cool in the tin while preparing the filling. A firm, fully cooled base helps support the softer caramel layer.
4. Cook the tahini caramel. Add the butter, brown sugar, and condensed milk to a saucepan. Warm over low to medium heat, stirring continuously so the mixture does not stick to the bottom. Once the butter has melted and the sugar has dissolved, continue cooking gently until the filling thickens and develops a deeper golden color. Stir in the tahini, vanilla, and salt until smooth.
5. Add the caramel layer. Pour the warm filling over the cooled shortbread and spread it evenly with a spatula. Allow it to cool at room temperature before placing the tin in the refrigerator. Chill until the caramel is firm enough to support the chocolate topping.
6. Melt the chocolate. Place the chopped chocolate in a heatproof bowl set over a saucepan of gently simmering water, making sure the bowl does not touch the water. Stir until smooth, then mix in the optional vegetable oil if you want a slightly easier-to-spread topping.
7. Add the chocolate topping. Pour the melted chocolate over the chilled caramel and spread it into an even layer. Sprinkle with sesame seeds if desired. Refrigerate until the chocolate has set completely.
8. Slice and serve. Lift the slab from the tin using the parchment paper. Let it stand briefly at room temperature, then divide it into squares using a warm, dry blade. Wipe the blade between cuts for neat, clean edges.
Tips for Neat, Delicious Layers
Stir the caramel consistently and keep the heat moderate to prevent scorching. It should become thick enough to hold its shape once chilled, but it should not be allowed to burn or become excessively hard. Make sure the shortbread and caramel have cooled before adding the next layer. Warm caramel can cause the chocolate to melt unevenly, while cutting the tahini millionaire before they are fully set may cause the layers to slide apart.
For easier slicing, allow the chocolate to soften slightly before cutting rather than serving the tahini millionaire straight from a very cold refrigerator. Store the finished tahini millionaire in an airtight container in the refrigerator and let individual portions stand briefly before serving.
Tahini millionaire offer a satisfying mix of crumbly shortbread, creamy sesame caramel, and rich chocolate. The preparation involves several stages, but each one is manageable when given enough time to cool and set. The finished squares are ideal for sharing, serving with a cup of tea, or keeping ready for a small sweet treat.
