Chicken schnitzel is a satisfying meal that pairs a crunchy, golden coating with tender chicken and a creamy mushroom sauce.
Adding miso to the sauce gives it a deep, savory flavor that complements the crisp chicken without overpowering it.
Ingredients You Will Need
2 boneless, skinless chicken
½ cup all-purpose flour
2 eggs
1 cup breadcrumbs or panko
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
Vegetable oil, for frying
200 g mushrooms, thinly sliced
1 tablespoon butter
1 teaspoon vegetable oil
2 garlic cloves, finely chopped
1 tablespoon white miso paste
½ cup chicken stock
½ cup cooking cream
1 teaspoon soy sauce, optional
Chopped parsley, for garnish
Lemon wedges, for serving
Preparation and Cooking Time
Preparation takes approximately 20 minutes, while cooking requires another 20–25 minutes. The recipe serves two people. Prepare all the ingredients before starting so you can move smoothly from frying the chicken to making the sauce.
How to Make Chicken Schnitzel with Miso Mushroom Sauce
1. Prepare the chicken. Slice each chicken horizontally into thinner pieces. Cover them with baking paper or plastic wrap and gently pound with a meat mallet or rolling pin until evenly thick. Season both sides with salt, black pepper, and garlic powder.
2. Set up the coating station. Place the flour in one shallow dish, beat the eggs in a second dish, and spread the breadcrumbs in a third. Coat each chicken piece in flour, dip it into the beaten egg, then press it into the breadcrumbs until both sides are covered. Shake off loose crumbs and set the coated chicken aside.
3. Fry the schnitzel. Heat a shallow layer of vegetable oil in a large frying pan over medium heat. Once the oil is hot, carefully add the chicken without overcrowding the pan. Fry for about 3–5 minutes on each side, depending on thickness, until the coating is golden and crisp. Check that the thickest part reaches 74°C (165°F). Transfer the chicken to a wire rack or paper-towel-lined plate and keep warm.
4. Cook the mushrooms. In a clean pan, heat the butter and one teaspoon of vegetable oil over medium heat. Add the sliced mushrooms and cook for several minutes, stirring occasionally, until their moisture evaporates and the edges begin to brown. This step helps develop a fuller mushroom flavor.
5. Build the sauce. Add the chopped garlic to the mushrooms and stir for about 30 seconds. Mix in the miso paste with a small splash of chicken stock, stirring until smooth. Pour in the remaining stock and cooking cream. Add the optional soy sauce, then let the mixture simmer gently for 3–5 minutes until slightly thickened. Taste before adding any extra salt because miso and soy sauce can already be salty.
6. Serve the dish. Place the crispy chicken on serving plates and spoon the mushroom sauce alongside or over part of each piece. Leave some of the coating uncovered to preserve its crunch. Garnish with chopped parsley and serve with lemon wedges.
Tips for Better Results
For an evenly crisp coating, make sure the chicken has a consistent thickness and press the breadcrumbs gently onto the surface. Fry in batches if necessary, since overcrowding lowers the pan temperature and can leave the coating less crisp. Give the mushrooms enough time to brown before adding the liquid. If the sauce becomes too thick, stir in a little extra stock. If it is too thin, let it simmer briefly until it reaches the consistency you prefer.
For the best texture, prepare the sauce close to serving time and fry the chicken just before the meal. Avoid covering the schnitzel tightly while it rests, as trapped steam can soften the crust.
What to Serve Alongside
This dish works well with mashed potatoes, steamed rice, or roasted vegetables. A fresh green salad provides a lighter contrast to the creamy sauce, while lemon adds brightness to the savory flavors. Choose a simple side dish so the crisp chicken and mushroom sauce remain the main focus.
Crispy chicken schnitzel with miso mushroom sauce combines a golden crust, tender chicken, and a smooth, savory topping in one satisfying meal. By preparing the chicken evenly, frying it carefully, and allowing the mushrooms to develop their flavor, you can create a comforting dinner with a little extra character. Serve it fresh from the pan for the best balance of crunch and creaminess.
